If you aren't interested in keeping the whole squirrel skin,
here's a method for field dressing a squirrel without gutting it:
Using
a knife, cut into a hind quarter in such a way as to include the lower back
muscle up to the base of the rib cage. Stop when the hip joint is the only
thing holding the hind quarter to the body.
Using
a small pair of pruning shears, cut through the hip joint, freeing it from the
body.
Remove
the skin from the hind quarter and clip off the foot with the shears.
Repeat
this process for the other hind quarter and front shoulders.
When finished, you will have four nice pieces of meat without
having to gut and skin the whole squirrel.
